Oatmeal Cakes with Coconut
- 450g / 2 1/2 cups rolled oats
- 225g / 1 cup granulated sugar
- 115g / 1 cup all-purpose flour
- 115g / 1 cup coconut flakes
- 115g / 4 oz / 1/2 cup softened butter
- 6g / 1 tsp baking powder
1. Preheat your oven to 350°F (175°C).
2. Mix 1 cup (200g) coconut flakes 1/2 cup (100g) sugar and 1 cup (100g) rolled oats in a large bowl.
3. Whisk 1/2 cup (115g) softened butter and 1 tsp (5g) baking powder in a separate bowl.
4. Combine the wet and dry ingredients then stir in 1 1/2 cups (190g) all-purpose flour.
5. Mix well until a dough forms.
6. Divide the dough into 20 equal pieces and shape each into a ball.
7. Flatten each ball slightly into a disk shape.
8. Place the disks on a baking sheet lined with parchment paper leaving about 1 inch (2.5cm) of space between each cake.
9. Bake for 15-20 minutes or until the edges are lightly golden brown.
10. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
11. Serve and enjoy!
