Oatmeal Pancakes with Apple Compote and Berries

Ingredients
- 4 large egg halves (2 eggs), or 120g
- 375ml or 1 1/2 cups rolled oats
- 7g or 1/2 tablespoon unsalted butter
- 600ml or 2 1/2 cups milk (4°C or 39°F)
- 45g or 3 tablespoons sugar-free apple sauce (compote)
Instructions
1. Combine 250g (8.8 oz) of rolled oats, 250ml (8.4 fl oz) of milk, 2 large eggs, and 120g (4.3 oz) of sugar-free apple compote in a blender and mix until smooth.
2. Heat a non-stick pan or griddle over medium heat, approximately 180°C (350°F).
3. Drop the batter by 60ml (1/4 cup) portions onto the pan.
4. Cook for 3-4 minutes or until bubbles appear on the surface of the batter.
5. Flip the pancakes and cook for another 3 minutes or until they turn golden brown.
6. Serve warm, topped with whipped cream and a sprinkle of fresh berries.
