Pan Seared Fish Burgers with Dill Sauce

- 400g / 14 oz white fish fillet (such as cod or haddock), thawed
- 4 hamburger buns
- 2 large tomatoes
- 2 large eggs, or 1 for the recipe
- 100g / 3.5 oz / 2 sticks of butter, softened
- 6 tbsp / 90g breadcrumbs
- 6 tbsp chopped fresh dill or 4 tbsp frozen dill
- salt and pepper to taste
- lettuce leaves for garnish
1. Preheat a non-stick skillet or griddle over medium heat, approximately 175°C (350°F).
2. In a bowl, gently mix 500g (1.1lb) of fish fillet, 1 egg, 1 teaspoon of salt, and a pinch of pepper until the ingredients are just combined.
3. Divide the mixture into 4 equal portions and shape each into a neat patty.
4. Place the patties on the preheated skillet and cook for 4-5 minutes per side, until they are cooked through.
5. Meanwhile, toast the hamburger buns until they are lightly browned and prepare the desired toppings, such as lettuce, tomato, and red onion.
6. In a small bowl, mix 20g (0.7oz) of chopped fresh dill with 50g (1.8oz) of softened butter to create a delicious dill sauce.
7. Assemble the burgers by spreading a dollop of dill sauce on the bottom of each bun, followed by a cooked fish patty, crisp lettuce, a juicy tomato slice, and finally the top bun.
8. Serve the Swedish fish burgers immediately and indulge in their crispy, flavorful goodness.
