Pasta Salad with Tomato Spinach and Herb Dressing

Ingredients
- 500g / 2 1/2 cups mixed tomatoes of various colors
- 60g / 1/4 cup thinly sliced green onions
- 120g / 1/2 cup baby spinach leaves
- 225g / 1 1/2 cups pasta, preferably fusilli
Instructions
1. Cook your pasta according to the package instructions then set it aside to cool completely.
2. In a separate bowl, whisk together the ingredients for your herb dressing and add salt and pepper to taste, adjusting the seasoning as needed.
3. In a large serving bowl, combine the cooled pasta and herb dressing, mixing everything together until the pasta is well coated.
4. Gently fold in the diced tomatoes, chopped scallions, and baby spinach leaves, then serve immediately.
