Pasta with Beef Strips in Pepper Sauce

- 8 oz / 225g beef strips
- 4 oz / 115g butter, for frying
- 4 oz / 115g mushrooms
- 4 oz / 115g pasta
- 2 cups / 475ml or 1 large bunch chopped fresh parsley
- Salt and pepper, to taste
1. Prepare your pasta according to the package instructions then drain and set it aside.
2. Melt 15g or 1 tablespoon of butter in a large skillet over medium heat, approximately 180°C or 350°F. Add the beef strips and cook until browned, about 3-4 minutes per side. Remove the beef from the skillet and set aside.
3. In the same skillet, add the remaining 15g or 1 tablespoon of butter. Add the mushrooms and cook until they release their moisture and start to brown, about 3-4 minutes.
4. Add the chopped parsley to the skillet and cook for an additional minute, stirring constantly.
5. Mix together salt and pepper to taste in a small bowl.
6. To assemble the dish, place the cooked pasta on a plate, top with the beef strips, and spoon the mushroom and parsley mixture over the top. Serve with a side of mixed greens.
