This pavlova has always been my go-to when I want something light yet satisfying. The crisp shell gives way to a soft center, cradling juicy berries and a bright touch of citrus. I love how the sweetness balances with the tartness of the fruit, making each bite feel fresh and never too heavy. It's become a favorite at gatherings, not because it's fancy, but because it feels made with care. Simple, yes, but it carries a quiet charm that people remember.
Ingredients
  • 4 large egg whites
  • 200g granulated sugar (1 cup)
  • 2 tsp cornstarch (10g)
  • 1 tsp citric acid or lemon juice (5ml)
  • 375ml heavy cream (1 1/2 cups)
  • 125g fresh raspberries (1 cup)
  • 125g fresh blueberries (1 cup)
  • 8 sprigs lemon balm
Instructions

1. 1. Preheat your oven to 150°C (300°F).

2. 2. In a mixing bowl, whisk together the egg whites, citric acid or lemon juice, and cornstarch until stiff peaks form.

3. 3. Gradually add the sugar to the egg mixture, whisking until smooth and glossy.

4. 4. Spoon the meringue mixture onto a baking sheet lined with parchment paper, forming a round shape.

5. 5. Bake for 1 1/2 hours, then turn off the oven and let it cool completely.

6. 6. In a separate bowl, whip the heavy cream until stiff peaks form.

7. 7. Arrange the fresh berries and lemon balm on top of the cooled pavlova, dolloping the whipped cream on top.

8. 8. Handle hot surfaces and sharp knives carefully to avoid accidents or injuries.

9. 9. Serve immediately and enjoy.
