Pork Medallions with Dragon and Mustard Sauce

Ingredients
- 400g/1 lb pork medallions
- 800g/1.8 lbs oven-roasted potatoes (serves 4)
- 40g/2 tbsp butter for frying
- Dragon and mustard sauce (see below for recipe)
- Salad, quantity as desired
- Salt and pepper, to taste
Instructions
1. Preheat your oven to 400°F or 200°C.
2. Season the pork medallions generously with salt and pepper.
3. In a large skillet, melt 1 tablespoon or 15 grams of butter over medium-high heat. Add 2 pork medallions and cook for 3-4 minutes per side, or until they are cooked through. Repeat this process with the remaining pork medallions.
4. Meanwhile, let's prepare the honey and mustard sauce. In a bowl, combine 1/2 cup or 120 milliliters of Dijon mustard, 1/4 cup or 60 grams of honey, and 1 tablespoon or 15 milliliters of lemon juice. Stir well to combine all the ingredients.
5. Serve the pork medallions with the honey and mustard sauce spooned over the top. This dish pairs beautifully with oven-roasted potatoes and a refreshing salad.
