Quick and Delicious Asparagus Appetizer

Ingredients
- 250 g (8.8 oz) fresh asparagus, woody ends trimmed
- 125 g (4.4 oz) water crackers
- 100 g (3.5 oz) soft goat cheese
- 50 g (1.8 oz) grated Parmesan cheese
- 1 tablespoon olive oil
- Salt and freshly ground black pepper to taste
Instructions
1. Preheat oven to 375°F (190°C)
2. Rinse asparagus under cold water and dry thoroughly
3. Toss asparagus with olive oil, salt and pepper
4. Spread asparagus on a parchment-lined baking sheet
5. Roast for 10 to 12 minutes until tender and caramelized at the tips
6. Remove asparagus from oven and let rest for 2 minutes
7. Arrange crackers on a baking sheet and toast for 5 minutes until crisp
8. Spread a thin layer of goat cheese on each cracker
9. Top each cracker with a piece of roasted asparagus
10. Sprinkle lightly with grated Parmesan
11. Serve immediately
