Ingredients
  • 2.4 dl / 1 cup dark syrup
  • 12 dl / 5 cups buttermilk
  • 16.8 dl / 7 cups gluten-free flour mix
  • 6 g / 1 tsp salt
  • 6 g / 1 tsp baking soda
  • 6 g / 1 tsp mixed anise, fennel, and caraway seeds
  • 30 g / 2 tbsp Fibrex
Instructions

1. Preheat your oven to 350°F (180°C)

2. Grease a ring-shaped cake pan

3. In a large bowl whisk together the gluten-free flour mix 1 cup (120g) and dark syrup ¾ cup (180ml) along with 1 teaspoon baking soda and ½ teaspoon salt

4. In another bowl whisk the buttermilk ¾ cup (180ml) until smooth then stir in 1 tablespoon aniseed 1 tablespoon fennel seeds and 1 tablespoon caraway seeds

5. Mix the wet ingredients into the dry ones until you get a smooth batter

6. Pour the batter into the greased cake pan and bake for 45 minutes or until a toothpick comes out clean when you stick it in the middle

7. Take the cake out of the oven and let it sit for 10 minutes before moving it to a wire rack to cool all the way
