Quick Potato and Ham Gratin

Ingredients
- 450g/1 lb thinly sliced ham
- 250g/1 cup shredded cheddar cheese (31% fat)
- 30g/2 tablespoons chopped fresh thyme (15g/1 tablespoon for EU, rounded to 30g for simplification, equals 2 tablespoons US)
- 400g/2 cups store-bought mashed potatoes
- 120g/1 medium diced tomato
- 120g/1 medium red bell pepper, diced
Instructions
1. Preheat your oven to 375°F or 190°C.
2. Grease a 23x33 centimeter or 9x13-inch baking dish with butter or cooking spray.
3. In a large bowl combine the mashed potatoes, shredded cheese, diced ham, and chopped thyme, mix well until all the ingredients are fully incorporated.
4. Transfer the potato mixture to the prepared baking dish and smooth out the top.
5. Arrange the diced red bell pepper and tomato on top of the potato mixture in a single layer.
6. Bake the gratin in the preheated oven for 25-30 minutes, or until the top is golden brown and the potatoes are cooked through.
7. Remove the dish from the oven and let it cool for a few minutes before serving.
