Refreshing Pineapple Mojito with Fresh Mint

- 1.5 oz (42g) granulated sugar
- 3 limes, approximately 1.3 oz (37g) each
- 6 oz (177ml) light rum
- 33.8 oz (1 liter) pineapple juice
- 74.4 oz (2.2 liters) sparkling water
- 1/2 bunch fresh mint leaves
- Crushed ice, as needed
1. Gently press the mint leaves with a muddler or the back of a spoon in a large pitcher to release their oils and flavor.
2. Add 600ml (20.3 fl oz) of pineapple juice, 120ml (4 fl oz) of freshly squeezed lime juice, and 240ml (8 fl oz) of white rum to the pitcher. Stir everything together well to combine.
3. Chill the mixture in the refrigerator at a temperature of around 4°C (39°F) for at least 30 minutes to allow the flavors to meld together.
4. Just before serving, add 1 liter (33.8 fl oz) of chilled sparkling water to the pitcher and stir gently to combine.
5. Fill glasses with ice cubes and pour the pineapple mojito mixture over the ice. Stir each glass gently to combine.
6. Garnish each glass with a sprig of fresh mint leaves and a lime wedge, if desired.
7. Serve the pineapple mojito immediately.
