Roasted Feta Cheese with Tomatoes and Onions

- 450g / 1 lb Feta Cheese (crumbly, 300g minimum used in recipe), sliced into 1/2 inch / 1.3 cm thick pieces (10.6 oz)
- 400g / 14 oz Tomatoes, halved
- 250g / 8.8 oz Red Onion (1 large onion), peeled and chopped
- 120g / 1/2 cup pitted Green Pistachios, chopped
- 120 ml / 1/2 cup Olive Oil
- 20g / 2-3 tsp Fresh Thyme, chopped
- 6g / 1 tsp Garlic (about 2 cloves), minced
- 5 ml / 1 tsp Honey
- Salt and black pepper, to taste
1. Preheat your oven to 200°C or 400°F.
2. In a large bowl, whisk together the olive oil, honey, salt, and black pepper, then add the chopped onion and mix until coated.
3. Spread the onion mixture evenly onto a large baking sheet and roast in the oven for 30 minutes, or until the onions are caramelized and tender.
4. While the onions are roasting, place the tomatoes, cut side up, on another large baking sheet, drizzle with a little olive oil, and sprinkle with salt and black pepper, then roast in the oven for 20-25 minutes, or until the tomatoes are tender and lightly caramelized.
5. In a small bowl, mix together the minced garlic and chopped pistachios.
6. Once the onions and tomatoes are done, remove them from the oven, crumble the feta cheese into large chunks, and place them on top of the roasted onions, then sprinkle the garlic-pistachio mixture over the feta cheese.
7. Return the baking sheet to the oven and roast for an additional 5-7 minutes, or until the feta cheese is lightly melted and golden brown.
8. Remove the baking sheet from the oven and sprinkle with chopped fresh thyme, then serve warm and enjoy!
