Roasted Trout with Almond and Chives Sauce

Ingredients
- 1 1/2 pounds (680g) trout fillet, skin on
- 1 1/2 cups (190g) sliced almonds
- 2 tablespoons (30g) butter
- 1 lemon wedge
- 1 teaspoon (5g) salt
- 1/2 teaspoon (2g) pepper
Instructions
1. Preheat the oven to 400°F (200°C)
2. Season the trout with salt and pepper
3. Place the trout on a baking sheet lined with parchment paper skin side down
4. Sprinkle the sliced almonds over the trout leaving a 1 inch border around the edges
5. Dot the top of the trout with butter
6. Roast the trout in the preheated oven for 12 to 15 minutes or until cooked through
7. While the trout is roasting prepare the chives sauce by mixing chopped chives with lemon juice and a pinch of salt
8. Serve the roasted trout with boiled potatoes a side salad and a dollop of the almond and chives sauce
