Rustic Oat and Peanut Butter Cookies
Ingredients
- 500 g creamy or chunky peanut butter (17.6 oz)
- 200 g granulated sugar (1 cup)
- 2 large eggs
- 240 ml light syrup (¾ cup)
- 400 g rolled oats (14 oz / 4 cups)
- 200 g salted peanuts (7 oz / 2 cups)
- 5 g baking powder (1 tsp)
Instructions
1. Preheat oven to 350°F (175°C)
2. In a large bowl, beat peanut butter, sugar, eggs, and light syrup until smooth and well combined
3. In a separate bowl, whisk together oats, salted peanuts, and baking powder
4. Add dry ingredients to wet ingredients and mix until a thick, sticky dough forms
5. Scoop dough and roll into 35 equal balls
6. Place balls on a parchment-lined baking sheet, leaving about 2 inches (5 cm) between each
7. Press each ball flat with a fork to create a crisscross pattern
8. Bake for 12 to 15 minutes, or until edges are golden brown and centers look set
9. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely
