Ingredients
  • 750 g salmon fillet (3 pieces, 250 g each) / 1.65 lb salmon fillet (3 pieces, 8.8 oz each)
  • 240 ml fish stock / 1 cup fish stock
  • 240 ml dry white wine / 1 cup dry white wine
  • 240 ml heavy cream / 1 cup heavy cream
  • 200 g large shrimp, peeled and deveined / 7 oz large shrimp, peeled and deveined
  • 100 g caviar / 3.5 oz caviar
  • 1 large yellow onion, peeled and finely chopped
  • 2 cloves garlic, peeled and minced
  • 2 tbsp olive oil
  • 1/2 tsp saffron threads
  • Salt and freshly ground black pepper to taste
  • Fresh dill sprigs for garnish
Instructions

1. 1. Preheat the oven to 200°C (400°F).

2. 2. In a large, oven-safe skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.

3. 3. Pour in the white wine, fish stock, and heavy cream. Bring the mixture to a simmer and let it cook for 5 minutes, allowing the flavors to meld and the sauce to thicken slightly.

4. 4. Add the saffron threads to the skillet and stir to distribute evenly. Let the saffron infuse the sauce for 2-3 minutes.

5. 5. Season the salmon fillets with salt and pepper on both sides. Place the fillets in the skillet, nestling them into the saffron cream sauce.

6. 6. Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the salmon is cooked through and easily flakes with a fork. The internal temperature should reach 60°C (145°F) for medium doneness.

7. 7. While the salmon is baking, cook the shrimp in a separate pan over medium heat until pink and opaque, about 2-3 minutes per side. Be careful not to overcook, as this will result in tough, rubbery shrimp.

8. 8. To serve, place a salmon fillet on each plate and top with the saffron cream sauce. Arrange the cooked shrimp over the salmon, then spoon a generous dollop of caviar on top. Garnish with fresh dill sprigs.
