Salmon with Almonds and Parmesan

Ingredients
- 300g / 10.6 oz salmon fillet, skin removed
- 2-3 medium-sized potatoes
- 120ml / 1/2 cup freshly grated Parmesan cheese (25g)
- 120ml / 1/2 cup chopped fresh basil (15g)
- 120ml / 1/2 cup sliced almonds (35g)
- 1/2 lemon, zested and juiced
- 1/2 clove garlic, minced
- Salt to taste
Instructions
1. Preheat your oven to 200°C or 392°F.
2. Boil the potatoes in salted water until they're tender.
3. In a bowl, combine almonds, parmesan cheese, minced garlic, grated lemon zest, and chopped fresh basil.
4. Place the salmon fillet in an oven-safe dish and spread the almond mixture evenly over the top of the fish.
5. Season with salt and a squeeze of lemon juice to taste.
6. Bake the salmon in the preheated oven for about 20 minutes, or until it reaches an internal temperature of 50°C or 122°F.
7. Serve the salmon alongside boiled potatoes and a simple side salad, finished with a slice of seared lemon.
