This well-rounded meal is perfect for any occasion when you want to impress without overcomplicating things.
Ingredients
  • 300g / 10.6 oz salmon fillet, skin removed
  • 2-3 medium-sized potatoes
  • 120ml / 1/2 cup freshly grated Parmesan cheese (25g)
  • 120ml / 1/2 cup chopped fresh basil (15g)
  • 120ml / 1/2 cup sliced almonds (35g)
  • 1/2 lemon, zested and juiced
  • 1/2 clove garlic, minced
  • Salt to taste
Instructions

1. Preheat your oven to 200°C or 392°F.

2. Boil the potatoes in salted water until they're tender.

3. In a bowl, combine almonds, parmesan cheese, minced garlic, grated lemon zest, and chopped fresh basil.

4. Place the salmon fillet in an oven-safe dish and spread the almond mixture evenly over the top of the fish.

5. Season with salt and a squeeze of lemon juice to taste.

6. Bake the salmon in the preheated oven for about 20 minutes, or until it reaches an internal temperature of 50°C or 122°F.

7. Serve the salmon alongside boiled potatoes and a simple side salad, finished with a slice of seared lemon.
