There's something so comforting about a warm, comforting bowl of brown beans infused with a sweet and savory broth. Crispy bits of bacon add a satisfying crunch to this traditional dish that's sure to become a favorite on chilly days when all you want is something hearty and soothing. This is the kind of meal that feels like a big hug in a bowl - and who doesn't love that?
Ingredients
  • 400g / 14 oz smoked bacon and dried brown beans, combined being the two main ingredients, are listed first, starting with the bacon for the enhanced flavour it adds to the dish.
  • 200 g / 7 oz smoked bacon, cut into small pieces
  • 200 g / 7 oz dried brown beans
  • 1 liter / 34 oz water, with a possible addition of ½ liter / 17 oz
  • 3 tbsp / 45 ml light syrup or granulated sugar
  • 2 tbsp / 30 g potato flour
  • 1 ½ tbsp / 22.5 ml vinegar (12% acidity)
  • 1 tsp / 5 ml salt
Instructions

1. Rinse the dried brown beans and soak them in water for at least 8 hours or overnight.

2. Drain the soaked brown beans and set them aside.

3. Combine the soaked brown beans, 225g (8 oz) of smoked bacon, 250ml (1 cup) of light syrup or 200g (1 cup) of granulated sugar, 10g (2 tsp) of salt, and 1 liter (4 cups) of water in a large pot.

4. Bring the mixture to a boil over high heat, then reduce the heat to low (150°C or 300°F) and simmer for about 1 ½ hours, or until the beans are tender.

5. Add 50ml (1/4 cup) of vinegar and 25g (2 tbsp) of potato flour to the pot. Stir well to combine.

6. Continue to simmer the mixture for another 10-15 minutes, or until the sauce has thickened slightly.

7. Serve the savory brown beans hot, topped with crispy bacon pieces.
