Ingredients
  • 600 g (1.32 lb) ground beef
  • 1 large egg
  • 75 g (2.65 oz) cold-smoked ham finely diced
  • 150 g (5.3 oz) mixed mushrooms button cremini shiitake finely chopped
  • 113 g (1 cup) sharp cheddar cheese grated
  • 30 ml (2 tbsp) Dijon mustard
  • 15 ml (1 tbsp) unsalted butter
  • 5 ml (1 tsp) black pepper
  • 5 ml (1 tsp) salt
  • 120 ml (½ cup) cherry vinegar
  • 100 g (½ cup) granulated sugar
  • 60 ml (¼ cup) water
  • 100 g (3.5 oz) pickled cherries drained chopped optional
Instructions

1. Preheat oven to 190°C (375°F)

2. Simmer cherry vinegar sugar and water in a small saucepan over medium heat until reduced by half and syrupy about 10 minutes set aside

3. Melt butter in a large pan over medium heat sauté mushrooms until golden and tender 7 minutes cool slightly

4. In a bowl combine ground beef sautéed mushrooms mustard smoked ham salt and pepper mix gently with hands

5. Beat egg in separate bowl stir in grated cheese fold into meat mixture

6. Press mixture into parchment-lined loaf pan shaping into a compact loaf

7. Bake 45 minutes brush generously with cherry glaze

8. Reduce oven to 175°C (350°F) bake 20 to 25 minutes until internal temperature reaches 71°C (160°F)

9. Rest 10 minutes before slicing

10. Serve with pickled cherries if desired
