Savory Sausage and Roasted Root Vegetables

Ingredients
- 1.2 lbs / 540g sausage of good quality
- 1.5 lbs / 680g potatoes
- 7 oz / 200g parsnips
- 7 oz / 200g carrots
- 1.8 oz / 50g grated cheese (31% fat content)
- 1 red onion
- 1 sprig of fresh thyme
- Oil for brushing
- Salt and freshly ground pepper
Instructions
1. Preheat your oven to 425°F or 220°C
2. Peel the potatoes parsnips and carrots then cut them into thin wedges
3. Slice the red onion
4. Put all the vegetables onto a baking sheet drizzle with oil and season with salt pepper and chopped thyme
5. Toss everything together so the vegetables are evenly coated
6. Cut the sausage into thick slices about 1 inch or 2.5 cm apart to form a crisscross shape
7. Place the sausage slices on top of the vegetables
8. Sprinkle grated cheese over the sausage
9. Roast for around 25 minutes until the root vegetables are tender but still firm and the sausage turns golden brown
10. Serve the dish hot with extra thyme on top if you like
