Savory Swedish Pancakes with Pizza Flavor

Ingredients
- 2 large eggs
- 475ml / 2 cups whole or low-fat milk (2% or semi-skimmed)
- 225g / 1 1/2 cups all-purpose flour
- 15g / 1 tablespoon finely chopped fresh parsley
- 6g / 1 teaspoon salt
Instructions
1. Preheat your skillet or griddle over medium heat, approximately 180°C (350°F).
2. Whisk together 250g (2 3/4 cups) of flour, 500ml (2 cups) of milk, 2 eggs, and 1/2 teaspoon of salt in a large bowl until the batter is smooth.
3. Add 20g (1/4 cup) of chopped parsley to the batter and mix well.
4. Scoop the batter onto the skillet using a 60ml (1/4 cup) measuring cup.
5. Cook for 2-3 minutes, until bubbles appear on the surface and the edges start to dry.
6. Flip the pancakes and cook for an additional 1-2 minutes, until golden brown.
7. Serve the pancakes warm and enjoy with your favorite toppings, such as pizza sauce and mozzarella cheese.
