Scandinavian Meatballs with Pickled Beet and Capers

Ingredients
  • 450g/1 pound ground beef or beef-pork mix
  • 120g/1/2 cup unsalted butter, softened
  • 115g/1/2 cup all-purpose flour
  • 115g/1/2 cup breadcrumbs
  • 120ml/1/2 cup water
  • 2 large egg
  • 60g/2 tablespoons finely chopped yellow onion
  • 30g/2 cloves garlic, minced
  • 15g/1 tablespoon chopped fresh dill
  • 15g/1 tablespoon pickled beets, finely chopped
  • 120g/1/2 cup chopped fresh parsley
  • 6g/1 1/2 teaspoons salt
  • 2 pinches white pepper
  • 2 pinches salt
Instructions

1. Preheat the oven to 375°F (190°C).

2. Combine ground beef, breadcrumbs, salt, and flour in a large mixing bowl.

3. Whisk the egg in a separate bowl then add chopped dill, onion, and water.

4. Add the egg mixture to the beef mixture and mix until just combined.

5. Use your hands to shape the mixture into small meatballs about 1 1/2 inches (3.8 cm) in diameter.

6. Place the meatballs on a baking sheet lined with parchment paper.

7. Bake for 15-20 minutes or until cooked through.

8. Mix softened butter, parsley, garlic, and salt in a small bowl to make the persilja smör.

9. Serve the meatballs with pickled beets and a dollop of persilja smör on top.
