These Scandinavian-inspired potato and herring bites are a beloved family recipe that I've enjoyed for years. Ingredients
  • 4 large boiled potatoes, cooled and sliced into 1.2 cm/½ inch rounds
  • 1 1/2 cups (360 g/12.7 oz) crème fraîche
  • 1/2 cup (50 g/1.8 oz) chopped fresh chives
  • 1/2 cup (15 g/0.5 oz) chopped fresh dill, plus extra for garnish
  • 1 small red onion, thinly sliced
  • 2 tbsp (30 g/1.1 oz) unsalted butter, softened
  • 4 hard-boiled eggs, peeled and chopped
  • 1/4 cup (40 g/1.4 oz) pickled herring, drained and chopped, plus extra for garnish
  • Salt and freshly ground black pepper, to taste
Instructions

1. In a skillet, sauté the sliced red onion in softened butter over medium heat for 5-7 minutes, or until soft and aromatic. Remove from heat and let cool.

2. In a mixing bowl, combine the cooled onions, chopped eggs, chopped pickled herring (reserving a few pieces for garnish), crème fraîche, salt, and pepper. Stir well to blend all ingredients.

3. Arrange the sliced potatoes neatly on a serving platter.

4. Spoon a portion of the egg and herring mixture evenly over each potato slice.

5. Garnish each with the reserved pickled herring pieces and freshly chopped dill and chives before serving. Enjoy!
