Scandinavian Style Toast with Shrimp and Dill Sauce

- 450g/1 lb large shrimp, peeled and deveined
- 120ml/1/2 cup mayonnaise, store-bought or homemade
- 120g/4 slices of white bread (such as baguette or ciabatta)
- 60ml/1/4 cup sour cream
- 60g/2 oz unsalted butter, softened
- 30g/1/4 cup chopped fresh chives or scallions
- 30g/2 tbsp freshly squeezed lemon juice (about 2 lemons)
- 10g/2 tsp Dijon mustard
- 5g/1 tsp chopped fresh dill
- Salt and pepper to taste
1. Preheat your oven to 375°F (190°C).
2. In a medium bowl, combine the mayonnaise, sour cream, Dijon mustard, salt, and pepper, mixing until the sauce is smooth.
3. Add the chopped fresh dill to the bowl and stir to combine well.
4. Set the dill sauce aside for now.
5. Arrange the shrimp on a baking sheet lined with parchment paper, leaving a small space between each shrimp.
6. Dot the top of each shrimp with softened butter.
7. Bake the shrimp in the preheated oven for 8-10 minutes, or until they turn pink and are cooked through.
8. While the shrimp are baking, toast the bread slices until they are lightly browned.
9. Spread a layer of the dill sauce on each toasted bread slice.
10. Once the shrimp are done, place 2-3 shrimp on top of the dill sauce on each bread slice.
11. Drizzle a small amount of lemon juice over the shrimp and sprinkle with chopped chives or scallions.
12. Serve immediately.
