Skip complicated starters. This is my emergency crowd-pleaser when friends show up unannounced. Crisp baguette rounds layered with bright pea puree, plump shrimp, and a generous smear of lemon-dill butter that melts into every bite. Looks fancy but comes together in 20 minutes flat. Perfect for celebrations or lazy weeknights. That butter? Non-negotiable.
Ingredients
  • 1 (8-inch / 20 cm) baguette
  • 3.5 ounces (100 grams) peeled shrimp
  • 3.5 ounces (100 grams) frozen green peas thawed
  • 2 tablespoons (30 milliliters) olive oil
  • 2 tablespoons (30 milliliters) sunflower oil
  • 1 tablespoon (14 grams) unsalted butter softened
  • 5 teaspoons (25 milliliters) fresh lemon juice
  • 1/2 teaspoon lemon zest
  • 1 teaspoon fresh dill chopped
  • 1/2 clove garlic minced
  • 1 ounce (28 grams) grated Parmesan cheese
  • Salt and freshly ground black pepper to taste
Instructions

1. Preheat oven to 400°F (200°C)

2. Slice baguette into 1/2-inch (1.25 cm) rounds brush with olive oil and season lightly with salt and pepper

3. Arrange on baking sheet bake 10-12 minutes until golden crisp then cool slightly

4. Blend thawed peas sunflower oil lemon juice salt and pepper until smooth

5. Mix softened butter lemon zest dill garlic salt and pepper in small bowl

6. Spread pea puree on each baguette round top with one shrimp

7. Add small dollop of lemon-dill butter and sprinkle Parmesan cheese

8. Serve immediately while butter is still melting into the bread
