Simple Apple Cake with Cinnamon

Ingredients
- 6 oz (170g) unsalted butter or margarine, softened
- 2 cups (400g) granulated sugar
- 1 1/2 cups (190g) all-purpose flour
- 4-6 medium apples, peeled and sliced
- 3 large eggs
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- Pearl sugar for topping
Instructions
1. Preheat the oven to 350°F (175°C).
2. Grease and flour a 9-inch (24 cm) round springform pan.
3. In a large mixing bowl cream butter and sugar until light and fluffy.
4. Add the eggs one at a time beating well after each addition.
5. In a separate bowl whisk together flour and baking powder.
6. Gradually add the dry ingredients to the wet ingredients mixing until just combined.
7. Arrange apple slices in a decorative pattern on top of the batter leaving a 1-inch (2.5 cm) border around the edges.
8. Sprinkle with cinnamon and sugar.
9. Bake the cake in the lower third of the oven for 45-50 minutes or until a toothpick inserted into the center comes out clean.
