Simple Apple Compote

Ingredients
- 450g (3 large or 5 small) Apples, peeled and chopped
- 180g (3/4 cup) Granulated Sugar
- 120ml (1/2 cup) Water
- 120ml (1/2 cup) Cold water with juice of 1/2 lemon
- 0.6g (1/4 teaspoon) Vanilla Powder
Instructions
1. Combine chopped apples, granulated sugar, and vanilla powder in a large pot, mixing until everything is well incorporated.
2. Add cold water and lemon juice to the pot, then bring the mixture to a boil over high heat - that's 232°C or 450°F if you're using a thermometer.
3. Reduce the heat to medium-low, about 160°C or 320°F, and let the mixture simmer for 20-25 minutes. You're aiming for tender apples and a liquid that has thickened into a syrupy consistency.
4. Remove the pot from the heat and let the apple compote cool down to room temperature, around 20°C or 68°F.
5. Use the compote straight away or store it in an airtight container in the fridge, where it'll keep for up to 5 days. Alternatively, you can freeze it for up to 3 months.
