Simple Macaroni Delight

- 720ml (3 cups) milk (3%)
- 400g (1 cup) macaroni, preferably traditional or old-fashioned
- 60g (1/4 cup) butter
- 60g (2.1 oz) all-purpose flour, about 1 1/2 tablespoons
- 6g (1/2 teaspoon) salt
- 2.5g (1/2 teaspoon) black pepper
- Optional: a pinch of grated nutmeg, to taste
1. Bring a large pot of salted water to a boil at 100°C (212°F).
2. Cook the macaroni according to the package instructions until it's al dente, then drain the water and set the macaroni aside.
3. Melt 25g (2 tablespoons) of butter in a large saucepan over medium heat.
4. Add 25g (2 tablespoons) of flour to the saucepan and whisk it together with the butter to make a roux, cooking for 1-2 minutes.
5. Gradually pour in 475ml (2 cups) of milk, whisking constantly to avoid lumps.
6. Bring the mixture to a gentle simmer and cook until it thickens, stirring occasionally.
7. Add the cooked macaroni, a pinch of salt, and a few grinds of black pepper to the saucepan.
8. Stir until the macaroni is well coated in the creamy sauce.
9. Serve hot, garnished with a pinch of grated nutmeg if desired.
