Simple Macaroni Delight
There's something special about a warm, comforting bowl of macaroni that just feels like home. This recipe is a timeless classic that never fails to hit the spot. It's easy to make and has a way of winning over even the most finicky eaters. Rich, creamy, and utterly satisfying, it's the perfect way to unwind on a cozy evening in.
Ingredients
  • 720ml (3 cups) milk (3%)
  • 400g (1 cup) macaroni, preferably traditional or old-fashioned
  • 60g (1/4 cup) butter
  • 60g (2.1 oz) all-purpose flour, about 1 1/2 tablespoons
  • 6g (1/2 teaspoon) salt
  • 2.5g (1/2 teaspoon) black pepper
  • Optional: a pinch of grated nutmeg, to taste
Instructions

1. Bring a large pot of salted water to a boil at 100°C (212°F).

2. Cook the macaroni according to the package instructions until it's al dente, then drain the water and set the macaroni aside.

3. Melt 25g (2 tablespoons) of butter in a large saucepan over medium heat.

4. Add 25g (2 tablespoons) of flour to the saucepan and whisk it together with the butter to make a roux, cooking for 1-2 minutes.

5. Gradually pour in 475ml (2 cups) of milk, whisking constantly to avoid lumps.

6. Bring the mixture to a gentle simmer and cook until it thickens, stirring occasionally.

7. Add the cooked macaroni, a pinch of salt, and a few grinds of black pepper to the saucepan.

8. Stir until the macaroni is well coated in the creamy sauce.

9. Serve hot, garnished with a pinch of grated nutmeg if desired.
