Soft and Delicious Layer Cake with Vanilla Filling
- 450g / 2 cups all-purpose flour
- 3 large eggs
- 675g / 3 cups granulated sugar
- 235ml / 1 cup warm water
- 10g / 2 teaspoons baking powder
1. Preheat the oven to 350°F (175°C).
2. Grease and flour three 8-inch (20 cm) round cake pans.
3. Whisk together 2 1/4 cups (285g) of flour and 1 cup (240ml) of warm water in a large mixing bowl until smooth.
4. Beat 3 large eggs and 1 3/4 cups (450g) of granulated sugar in a separate bowl until light and fluffy.
5. Add 2 teaspoons of baking powder to the egg mixture and mix well.
6. Gradually add the egg mixture to the flour mixture beating until smooth.
7. Divide the batter evenly among the prepared pans and smooth the tops.
8. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
9. Let cool completely in the pans.
10. Once the cakes are cool assemble the layer cake by spreading a layer of vanilla filling on top of one cake.
11. Repeat the process with the remaining cakes.
12. Dust the top of the cake with powdered sugar and serve.
