Spiced Apple Drink with Gin and Cinnamon
Ingredients
- 250g / 1 cup granulated sugar
- 240ml / 1 cup water
- 115g / 1/2 cored apple, sliced
- 7g / 1 teaspoon ground cinnamon
- Powdered ground cinnamon for garnish
Instructions
1. In a medium saucepan combine 200g granulated sugar 1 cup water and 1 cinnamon stick.
2. Heat the mixture over medium heat stirring occasionally until the sugar dissolves and the mixture reaches 212°F (100°C).
3. Remove the syrup from the heat and let it cool to room temperature.
4. Strain the syrup through a fine-mesh sieve into a large pitcher or jug and discard the cinnamon.
5. Add 1 sliced apple to the pitcher and let it infuse in the refrigerator for at least 2 hours or overnight.
6. Just before serving stir in 60ml (2 oz) gin if desired.
7. Serve the spiced apple drink chilled garnished with a sprinkle of powdered cinnamon if desired.
