Spicy and Creamy Sausage Stew

Ingredients
- 475ml (1 cup) water
- 6g (1 tsp) ground cumin
- 225g (1.5 medium) yellow onions
- 2g (0.5 tsp) cayenne pepper
- 475ml (2 cups) crème fraiche (or sour cream)
- 45g (3 tbsp) tomato puree
- 450g (1 lb) Swedish-style sausage, such as falukorv
- 30g (2 tbsp) rapeseed oil (or canola oil)
- 6g (1 tsp) salt
Instructions
1. Peel the sausage and cut it into long, thin strips.
2. Next, peel the onions and slice them. In a large pan, heat some rapeseed oil over medium heat (around 180°C/350°F). Brown the sausage and onions in batches until they're nicely caramelized.
3. Add a teaspoon of ground cumin, a pinch of salt, and a dash of cayenne pepper to the pan. Stir everything together to combine the flavors.
4. In a separate bowl, whisk together 150ml (5.3 fl oz) of crème fraiche, 2 tablespoons of tomato puree, and 100ml (3.5 fl oz) of water. Pour the mixture into the pan and let it simmer for about 5 minutes. Taste and adjust the seasoning as needed.
5. Serve the spicy sausage stew over freshly cooked pasta, accompanied by a simple side salad of your choice.
