This chicken dish has become a go-to in my kitchen, simple but always satisfying. I love how it comes together quickly yet feels special enough for guests. The warmth of the spice lingers just right, not too sharp, balanced by the softness of the rice. It's not fancy, just honest food made with care, the kind that feels like home. Ingredients
  • 680 g (24 oz) chicken breast fillets
  • 360 g (1 1/2 cups) uncooked white rice
  • 5 mL (1 tsp) red pepper flakes
  • 10 mL (2 tsp) paprika
  • 10 mL (2 tsp) garlic powder
  • 10 mL (2 tsp) onion powder
  • 10 mL (2 tsp) salt, divided
  • 10 mL (2 tsp) black pepper, divided
  • 15 mL (1 tbsp) olive oil
  • 2-3 green onions (scallions), chopped
Instructions

1. In a small bowl, mix together the red pepper flakes, paprika, garlic powder, onion powder, 5 mL (1 tsp) of the salt, and 5 mL (1 tsp) of the black pepper to create a spice blend.

2. Season the chicken breast fillets with the remaining 5 mL (1 tsp) salt and 5 mL (1 tsp) black pepper on both sides.

3. Heat a non-stick skillet over medium heat and add the olive oil.

4. Place the seasoned chicken in the skillet and cook for 5 to 7 minutes per side until golden brown and cooked through (internal temperature should reach 74°C (165°F)).

5. While the chicken is cooking, prepare the rice according to package instructions. For added flavor, cook the rice in chicken or vegetable broth instead of water.

6. When the chicken is done, sprinkle the spice blend evenly over the top of each chicken breast.

7. Serve the spicy chicken with the warm rice and a sprinkle of chopped green onions on top.
