Spicy and Sweet Tomato Chutney
This tomato chutney is a masterful balance of sweet and spicy. Fresh ginger and red chili peppers meld with the deep flavor of brown sugar to create an utterly addictive taste experience that will leave you wanting more of its rich and tangy goodness.
Ingredients
  • 500g / 1.1lb ripe red tomatoes, chopped
  • 75g / 2.6oz fresh ginger, grated
  • 2-3 fresh red chili peppers, chopped (use more for increased heat)
  • 3 cloves garlic, minced
  • 50g / 1.8oz brown sugar
  • 50g / 1.8oz granulated sugar
  • 120ml / 1/2 cup balsamic vinegar
Instructions

1. Combine chopped tomatoes, brown sugar, granulated sugar, balsamic vinegar, grated ginger, and minced garlic in a large saucepan.

2. Bring the mixture to a boil over high heat (around 200°C/392°F), then reduce the heat to medium-low (around 150°C/302°F) and simmer for 20-25 minutes, stirring now and then.

3. Add the chopped red chili peppers and continue to simmer for another 5-7 minutes, or until the chutney has thickened slightly.

4. Take the saucepan off the heat and let the chutney cool down to room temperature.

5. Transfer the chutney to a sealed container and refrigerate it for at least 2 hours before serving.
