Spicy and Sweet Tomato Chutney

Ingredients
- 500g / 1.1lb ripe red tomatoes, chopped
- 75g / 2.6oz fresh ginger, grated
- 2-3 fresh red chili peppers, chopped (use more for increased heat)
- 3 cloves garlic, minced
- 50g / 1.8oz brown sugar
- 50g / 1.8oz granulated sugar
- 120ml / 1/2 cup balsamic vinegar
Instructions
1. Combine chopped tomatoes, brown sugar, granulated sugar, balsamic vinegar, grated ginger, and minced garlic in a large saucepan.
2. Bring the mixture to a boil over high heat (around 200°C/392°F), then reduce the heat to medium-low (around 150°C/302°F) and simmer for 20-25 minutes, stirring now and then.
3. Add the chopped red chili peppers and continue to simmer for another 5-7 minutes, or until the chutney has thickened slightly.
4. Take the saucepan off the heat and let the chutney cool down to room temperature.
5. Transfer the chutney to a sealed container and refrigerate it for at least 2 hours before serving.
