Spicy Chicken and Tomato Gratin with Garlic and Basil
My Italian-inspired chicken gratin is the ultimate comfort food - a rich, satisfying dish that combines the tender flavors of chicken, tomatoes, and basil beneath a velvety blanket of creamy sauce and melted cheese. Ingredients
  • 750g/1 1/2 lbs boneless, skinless chicken breast or thighs, cut into 2.5cm/1-inch pieces
  • 475ml/2 cups cherry tomatoes, halved
  • 250ml/1 cup crème fraiche
  • 120g/1/2 cup grated Parmesan cheese
  • 60g/2 tbsp unsalted butter
  • 30g/2 tbsp chopped fresh basil
  • 30g/2 tbsp veal stock
  • 30g/2 tbsp soy sauce
  • 15g/1 tsp dried oregano
  • 15g/1 tsp salt
  • 7g/1 tsp black pepper
  • 3-4g/1-2 tsp fresh red chili pepper, seeded and finely chopped
  • 3 cloves garlic, minced
Instructions

1. Preheat your oven to 375°F or 190°C.

2. In a small bowl, whisk together 60ml of water, 1 teaspoon of dried oregano, and 1 teaspoon of soy sauce. Add 500g of chicken and marinate for at least 30 minutes.

3. In a large skillet, heat 15g of butter over medium-high heat. Remove the chicken from the marinade, letting any excess liquid drip off. Cook the chicken until browned on all sides and cooked through, about 5-7 minutes. Transfer to a plate and set aside.

4. In the same skillet, add the remaining 15g of butter. Add 3 cloves of chopped garlic and cook until fragrant, about 1 minute.

5. Add 250g of cherry tomatoes and cook until they start to release their juices, about 2-3 minutes.

6. In a separate bowl, whisk together 120ml of crème fraiche, 1 teaspoon of soy sauce, and a pinch of salt and pepper. Add the cooked chicken back to the skillet and pour in the creamy sauce. Toss to coat the chicken and tomatoes.

7. Transfer the chicken and tomato mixture to a 23x33cm baking dish. Top with 60g of grated Parmesan cheese and 15g of chopped fresh basil.

8. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

9. Serve hot and enjoy!
