Spicy Citrus Refresher with Ginger

- 500ml/16.9 oz water
- 2 tbsp/30ml freshly squeezed lemon juice (approximately 1 lemon)
- 125ml/4.2 oz honey (at room temperature)
- 175g/6.2 oz fresh ginger, peeled and sliced
- 60g/2.1 oz fresh red chili pepper, seeded and chopped
- 2 tbsp/30ml freshly squeezed orange juice (approximately 1 orange)
- 2 tbsp/30ml freshly squeezed lime juice (approximately 1 lime)
1. Peel the ginger and slice it thinly, then place the slices in a large bowl or pot.
2. Add 250g (8.8 oz) of honey and mix until it is fully dissolved.
3. Cut the chili pepper in half and add it to the bowl. Squeeze the juice of 1 lemon, 1 lime, and 1 orange into the bowl, taking care to catch any seeds.
4. Add 1 liter (33.8 fl oz) of water to the bowl and mix well. Cover the bowl with a lid or plastic wrap and refrigerate at a temperature of 4°C (39°F) for at least 2 hours or overnight.
5. Strain the liquid into a large pitcher or jug, pressing on the solids to extract as much juice as possible. Discard the solids.
6. Chill the drink in the refrigerator at 4°C (39°F) before serving. Adjust the spiciness level to your taste by adding more or less chili pepper.
