Ingredients
  • 2 pinches chili flakes
  • 3 garlic cloves
  • 1 ¾ cups large prawns (about 170g drained weight)
  • Salt and pepper
  • 1 ½ teaspoons paprika
  • 1 tablespoon lemon juice
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons unsalted butter
  • 2 tablespoons tomato puree
Instructions

1. Preheat the oven to 482°F (250°C).

2. Drain the prawns and set them aside.

3. In a bowl, mix together the softened butter and the minced garlic until well combined then add in the chopped parsley and mix until just combined followed by adding in the tomato puree and chili flakes then season with salt and pepper until well combined.

4. Arrange the prawns in a baking dish and spread the garlic-parsley mixture evenly over them.

5. Bake in the middle of the oven for about 10 minutes or until the prawns are pink and cooked through.

6. Serve immediately with crusty bread and a sprinkle of chopped parsley.
