Spicy Garlic Shrimp Tapas

Ingredients
- 500g / 1.1 pounds large shrimp, peeled and deveined
- 120ml / 1/2 cup olive oil
- 30g / 1 ounce freshly squeezed lime juice (about 1/2 lime)
- 15g / 1/2 cup chopped fresh parsley
- 6g / 1.25 teaspoons minced fresh red chili pepper (about 1/2 pepper)
- 3g / 1.25 teaspoons minced garlic (about 1 clove)
Instructions
1. Peel the shrimp, leaving their tails intact, then rinse under cold water and gently pat dry with paper towels.
2. Heat 2 tablespoons (30 milliliters) of olive oil in a large skillet over medium heat, approximately 325°F (165°C).
3. Add 1-2 cloves of minced garlic to the skillet and cook, stirring occasionally, for 1 minute or until fragrant.
4. Add the shrimp to the skillet and cook for 1-2 minutes per side, until they turn pink and are cooked through.
5. Remove the skillet from the heat source. Stir in 1/4 cup (15 grams) of chopped parsley, 1-2 tablespoons (15-30 milliliters) of freshly squeezed lime juice, and 1 minced chili pepper.
