Spicy Garlic Shrimp with Garlic Bread
- 1 pound (450 g) large shrimp, peeled and deveined
- 1 large baguette (250 g)
- 1/2 cup (115 g / 113 g) unsalted butter, softened
- 1/2 cup (120 ml) olive oil
- 1 cup (25 g) fresh parsley, chopped
- 2 large ripe tomatoes (200 g), diced
- 2 large garlic cloves (6 g), minced
- 1/2 teaspoon salt (3 g)
- 1/4 teaspoon black pepper (0.5 g)
- 1/2 teaspoon paprika (1 g)
- 1/4 teaspoon cayenne pepper (0.5 g)
1. Preheat the oven to 400°F (200°C).
2. In a small bowl, combine the cayenne pepper, salt, black pepper, and paprika. Set aside.
3. In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and cook for 1 minute until fragrant.
4. Add the shrimp to the skillet and sprinkle with the spice mixture. Cook for 2 to 3 minutes, stirring occasionally, until the shrimp are pink and cooked through. Be careful not to overcook, as this will make the shrimp tough and rubbery.
5. Meanwhile, slice the baguette into 1-inch (2.5 cm) thick rounds. Place on a baking sheet and toast in the preheated oven for 5 to 7 minutes, until crispy and lightly golden.
6. Remove the garlic bread from the oven and spread each slice with the softened butter. Sprinkle with the chopped parsley and a pinch of salt.
7. To serve, transfer the shrimp to a serving platter and top with the diced tomatoes. Serve the garlic bread on the side, ready to mop up the delicious sauce. Enjoy this lively and flavorful dish with loved ones!
