Spicy Mango Sauce with a Kick

Ingredients
- 4g / 2 teaspoons sambal chili paste
- 15g / 1 tablespoon tomato puree
- 250g / 1 cup diced mango
- Salt and pepper to taste
- 15g / 1 tablespoon mayonnaise
- 120g / 1/2 cup crème fraiche (or sour cream)
Instructions
1. Combine the diced mango, crème fraiche, salt, and pepper in a blender or food processor and blend until smooth.
2. Add the sambal oelek, which is a chili paste, tomato puree, and mayonnaise to the blender and blend until well combined.
3. Taste the sauce and adjust the seasoning as needed, adding more salt, pepper, or chili paste to taste.
4. Cover the sauce and refrigerate it for at least 30 minutes to allow the flavors to meld together, which will help to bring out the best flavors.
5. Serve the spicy mango sauce chilled, around 4°C or 39°F, or at room temperature, around 20°C or 68°F, whichever you prefer.
