Spicy Meat and Sausage Jambalaya

- 500g/1.1lb (2 1/4 cups) uncooked basmati rice
- 6g/0.2oz (1 teaspoon) curry powder
- 6g/0.2oz (1 teaspoon) salt
- 3g/0.1oz (1/2 teaspoon) black pepper
- 2 medium bell peppers, diced
- 1 medium yellow onion, chopped
- 300g/10.6oz ground meat
- 100g/3.5oz sausage, cut into small pieces
- 15ml/0.5fl oz (1 tablespoon) olive oil
- 475ml/16fl oz (2 cups) beef broth
- 45ml/1.5fl oz (3 tablespoons) tomato puree
1. Preheat your oven to 350°F or 180°C.
2. In a large skillet, heat some olive oil over medium heat and add the chopped onion. Cook until the onion is softened, which should take about 5 minutes.
3. Next, add the diced bell peppers to the skillet and cook until they're tender, which should also take about 5 minutes.
4. Now, in a large bowl, combine the ground meat, sausage, curry powder, salt, and black pepper. Mix everything together with your hands or a spoon until it's just combined.
5. Add the cooked onion and bell pepper mixture to the meat mixture and mix until everything is just combined.
6. In a large Dutch oven or oven-safe pot, combine the meat mixture, beef broth, and tomato puree. Bring everything to a boil, then cover the pot and transfer it to the preheated oven.
7. Bake for 25-30 minutes, or until the meat is cooked through and the liquid has been absorbed.
8. Remove the pot from the oven and stir in the uncooked basmati rice. Cover the pot again and let it rest for 5 minutes.
9. Finally, serve the Jambalaya hot, garnished with chopped fresh herbs if you like.
