Ingredients
  • 450 g (1 lb) ground beef
  • 30 g (1/4 cup) breadcrumbs
  • 1 large egg
  • 40 g (1/4 cup) finely chopped yellow onion
  • 1 clove garlic minced
  • 5 g (1 teaspoon) dried oregano
  • 1 g (1/2 teaspoon) red pepper flakes
  • 1.5 g (1/4 teaspoon) salt
  • 1 g (1/4 teaspoon) black pepper
  • 115 g (4 oz) feta cheese cut into 12 small cubes
  • 240 g (1 cup) Greek yogurt
  • 1/2 medium cucumber grated and squeezed dry
  • 1 clove garlic minced
  • 15 ml (1 tablespoon) lemon juice
  • 4 g (1 tablespoon) fresh dill chopped
  • 1.5 g (1/4 teaspoon) salt
  • 900 g (4 large) russet potatoes cut into wedges
  • 30 ml (2 tablespoons) olive oil
  • 5 g (1 teaspoon) salt
  • 1 g (1/2 teaspoon) paprika optional
  • 6 dried tomatoes packed in oil chopped optional
  • Fresh parsley chopped optional
  • Greek salad for serving
Instructions

1. Preheat oven to 200°C (400°F)

2. Toss potato wedges with olive oil salt and paprika

3. Spread potatoes on a baking sheet in single layer

4. Bake potatoes 25 to 30 minutes flipping once

5. Mix Greek yogurt cucumber garlic lemon juice dill and salt for tzatziki

6. Refrigerate tzatziki until serving

7. Combine ground beef breadcrumbs egg onion garlic oregano red pepper flakes salt and pepper

8. Form 12 meatballs pressing one feta cube into center of each

9. Place meatballs on baking sheet

10. When potatoes have 15 minutes left add meatballs to oven

11. Bake meatballs 15 to 18 minutes until cooked through

12. Serve meatballs with tzatziki potatoes and Greek salad

13. Garnish with chopped dried tomatoes and fresh parsley optional
