Spicy Pork Filet Gratin with Mushroom and Bell Pepper

- 450g / 1 pound pork filet, sliced
- 250g / 2 cups mixed mushrooms (button, cremini, shiitake)
- 120g / 1/2 cup grated mature cheese (31% fat)
- 30g / 2 tablespoons unsalted butter
- 2 teaspoons Chinese soy sauce
- 1 large red bell pepper, diced
- 1 large onion, diced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
1. Preheat the oven to 425°F or 220°C
2. In a pan melt 1 tablespoon of butter over medium heat
3. Add the sliced pork fillet and cook until browned
4. Stir in 1 teaspoon of soy sauce and half a teaspoon of salt
5. Mix well
6. In another pan melt the remaining tablespoon of butter over medium heat
7. Add the diced onion and cook until softened
8. Include the diced bell pepper and cook for another 2 to 3 minutes
9. Add the mixed mushrooms to the pan and cook until they release their liquid and begin to brown
10. Mix in the remaining teaspoon of soy sauce half a teaspoon of salt and half a teaspoon of black pepper
11. In a greased 9 by 13 inch baking dish lay out the cooked pork fillet slices in a single layer
12. Cover with the mushroom and bell pepper mixture then top with grated cheese
13. Bake in the preheated oven for 20 to 25 minutes until the cheese is melted and bubbly
14. Serve hot with boiled potatoes on the side
