Ingredients
  • 1 lb (450 g) pork tenderloin
  • 1 yellow onion (150 g) finely chopped
  • 2 garlic cloves (10 g) minced
  • 2 tbsp (30 ml) soy sauce
  • 2 tbsp (30 ml) vegetable oil
  • 2 tbsp (30 ml) water for pork sauce
  • 1 1/2 tsp (4 g) ground coriander
  • 1 tbsp (6 g) cumin powder
  • 1 tsp (2 g) chili powder
  • 2 tsp (5 g) black pepper
  • 3/4 tsp (4 g) salt for pork rub
  • 1 1/2 red onions (225 g) thinly sliced for pickling
  • 1 1/2 tbsp (22.5 ml) white wine vinegar
  • 3 tbsp (38 g) granulated sugar
  • 1/2 tsp (3 g) salt for pickling
  • 2 tbsp (30 ml) water for pickling
  • 2 medium tomatoes (300 g) diced
  • 1/4 red onion (40 g) finely chopped for salsa
  • 1/4 cup (15 g) fresh cilantro chopped
  • 15 ml (1 tbsp) fresh lime juice
  • 1/4 tsp (1 g) salt for salsa
  • 8 hard corn taco shells
Instructions

1. Make pickled red onions: Combine 1 1/2 red onions white wine vinegar 3 tbsp sugar 2 tbsp water and 1/2 tsp salt in a bowl. Stir until sugar dissolves. Let sit at room temperature 30 minutes stirring occasionally

2. Mix ground coriander cumin powder chili powder black pepper and 3/4 tsp salt in a small bowl

3. Pat pork tenderloin dry then rub spice mix evenly over all sides

4. Heat vegetable oil in large skillet over medium-high. Add yellow onion cook until softened about 5 minutes

5. Stir in minced garlic cook 1 minute until fragrant

6. Pour in soy sauce and 2 tbsp water. Bring to simmer cook 2-3 minutes until slightly thickened

7. Slice pork tenderloin into thin strips. Add to skillet cook 3-4 minutes stirring occasionally until browned and cooked through

8. Make salsa: Combine diced tomatoes 1/4 red onion cilantro lime juice and 1/4 tsp salt in small bowl. Stir well

9. Warm taco shells according to package directions typically in 350°F (175°C) oven 5 minutes or dry skillet 30 seconds per side

10. Assemble tacos: Fill each shell with pork slices spoonful of onion-garlic sauce spoonful of salsa and few pickled red onion slices. Serve immediately
