Spicy Taco Pizza with Tortilla Chips

- 500g/1.1lb ground beef, chicken, or soybean
- 425g/15 oz can of corn, drained
- 340g/12 oz pre-made pizza crust with tomato sauce
- 225g/8 oz package of tortilla chips (for serving with guacamole)
- 170g/6 oz shredded cheese
- 2 ripe avocados
- 2 sprigs of fresh cilantro
- 2 tbsp/30ml taco seasoning mix
- 2 tbsp/30ml cooking oil for frying
- 1 tsp/5ml honey
- 1 tsp/5ml chili flakes
- 1 fresh red chili pepper (optional)
- 1 lime, juiced and zested
- 1 clove of garlic, minced
- Salt and pepper to taste
1. Preheat the oven to 400°F or 200°C.
2. Mash the avocados in a bowl with a fork until smooth to prepare the guacamole.
3. Add garlic, lime juice, lime zest, chili flakes, cilantro, honey, salt, and pepper to the bowl and mix well, then set the guacamole aside.
4. Heat a generous amount of cooking oil in a large pan over medium-high heat.
5. Add the ground beef, or alternatively chicken or soybean, and cook until browned, breaking it into small pieces as it cooks. Drain off any excess fat.
6. Stir in the taco seasoning mix and cook for 1-2 minutes, until the flavors have been absorbed.
7. Roll out a pre-made pizza crust and place it on a baking sheet. Spread the taco meat mixture evenly over the crust, leaving a small border around the edges.
8. Sprinkle shredded cheese over the taco meat. Top with tortilla chips, crushing them slightly to fit the shape of the pizza.
9. Bake the pizza in the preheated oven for 15-20 minutes, until the crust is golden brown and the cheese is melted and bubbly.
10. Remove the pizza from the oven and top it with the guacamole. Serve immediately and enjoy!
