Summer Melon Salad with Feta and Fresh Mint

Ingredients
- 150g / 5.3 oz crumbled feta cheese
- 4 cups / 1L cubed watermelon (from 1 small watermelon)
- 1/2 cup / 120 ml freshly squeezed lime juice (from 2 limes)
- 2-3 tbsp / 30-45 ml olive oil
- 1 small thinly sliced red onion
- 1/4 cup / 15g chopped fresh mint leaves
- Salt and pepper (preferably flaky salt) to taste
Instructions
1. Combine cubed watermelon, crumbled feta cheese, and chopped fresh mint leaves in a large bowl.
2. Season with salt and pepper to taste, using flaky salt if you have it.
3. Drizzle a small amount of olive oil over the salad to enhance the flavors.
4. Thinly slice a red onion and arrange it on top of the salad for a burst of color.
5. Squeeze the juice of 2 organic limes over the salad to add a tangy and refreshing touch.
