Summer Salad with Strawberries and Melon
Ingredients
- 10 cups mixed greens
- 1 large melon (cantaloupe or honeydew), diced – approximately 1.5 kg / 3.3 lb
- 2 cups strawberries, hulled and sliced – 300 g / 10.6 oz
- 1 cup sugar snap peas – 120 g / 4.2 oz
- 4 scallions, thinly sliced – about 60 g / 2.1 oz
- 60 ml / 1/4 cup olive oil
- 30 ml / 2 tablespoons balsamic vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
Instructions
1. In a large bowl, mix together the mixed greens, scallions, and sugar snap peas.
2. Place the diced melon and sliced strawberries on top of the greens.
3. For the vinaigrette, combine 60 ml (1/4 cup) olive oil, 30 ml (2 tablespoons) balsamic vinegar, 1 teaspoon Dijon mustard, and 1 teaspoon honey in a small bowl.
4. Whisk the vinaigrette ingredients until well emulsified.
5. Drizzle the dressing evenly over the salad just before serving to prevent the greens from wilting.
