Swedish-Style Beef Patties with Lingonberry Jam and Pickled Onions
- 500 g (1.1 lb) ground beef
- 30 g (3 tablespoons) oatmeal
- 1 large egg
- 15 ml (1 tablespoon) potato starch
- 5 g (1 teaspoon) salt
- 1.5 g (1/2 teaspoon) black pepper
- Butter or oil for frying
- 1 medium red onion thinly sliced
- 120 ml (1/2 cup) apple cider vinegar
- 120 ml (1/2 cup) water
- 15 g (1 tablespoon) sugar
- 5 g (1 teaspoon) salt for pickling
- 800 g (1.8 lb) potatoes peeled and cut into chunks
- Salt for boiling potatoes
- 120 ml (1/2 cup) lingonberry jam
1. Combine sliced red onion vinegar water sugar and 1 teaspoon salt in a bowl. Stir until dissolved. Set aside for 20 minutes stirring occasionally.
2. Place potatoes in a large pot cover with cold water and add a generous pinch of salt. Bring to boil then reduce heat and simmer until fork-tender 15-20 minutes. Drain and keep warm.
3. In a medium bowl mix oatmeal egg potato starch 1 teaspoon salt and black pepper. Add ground beef and gently combine until just incorporated.
4. Divide mixture into 4 equal portions. Shape each into a patty 1.5 cm (0.6 inch) thick.
5. Heat butter or oil in a skillet over medium heat. Cook patties 4-5 minutes per side until golden brown and internal temperature reaches 71°C (160°F).
6. Drain patties on paper towels. Serve immediately with potatoes drained pickled onions and lingonberry jam.
