Ingredients
  • 1 large green apple, diced (approx. 150g / 5.3 oz)
  • 475ml / 2 cups rolled oats (gluten-free)
  • 250g / 1 cup chopped hazelnuts or other nuts
  • 120g / 1 cup pumpkin seeds
  • 120g / 1 cup sunflower seeds
  • 60g / 1/2 cup shredded coconut (unsweetened)
  • 60g / 1/2 cup dark chocolate chips (dairy-free)
  • 2.5ml / 1/2 teaspoon ground cinnamon
  • 2.5ml / 1/2 teaspoon ground cardamom
  • 1.25ml / 1/4 teaspoon flaky sea salt
Instructions

1. Preheat your oven to 300°F or 150°C. Line a baking sheet with a sheet of parchment paper to prevent sticking.

2. In a large bowl, combine the oats, nuts, pumpkin seeds, sunflower seeds, and shredded coconut, stirring to mix them together evenly.

3. In another bowl, blend the cinnamon, cardamom, and sea salt. Add this spice mixture to the dry ingredients and stir until they're well combined.

4. Melt the chocolate chips using a double boiler or by heating them in the microwave in 30-second increments, stirring between each interval until they're smooth.

5. Add the melted chocolate to the dry ingredients and stir until everything is well coated with the chocolate.

6. Spread the mixture out onto the prepared baking sheet and bake for 20-25 minutes, stirring every 10 minutes, until the granola is lightly toasted.

7. Remove the granola from the oven and let it cool completely. Once cool, stir in the diced apple to finish the granola.
