Sweet Potato Fritters with Parmesan and Chives
- 500 g / 1.1 lb sweet potatoes
- 1 bunch (about 20 g / 0.7 oz) fresh chives, finely chopped
- 2 large eggs
- 100 g / 3.5 oz Parmesan cheese, finely grated
- 2 tbsp / 30 ml olive oil, plus more for frying
- 2 tbsp / 30 ml potato flour
- 1 tsp / 5 ml salt
- 1 tsp / 5 ml onion powder
- 1/4 tsp / 1.25 ml freshly ground black pepper
1. Begin by washing and drying the chives thoroughly. Finely chop them and set aside.
2. Peel the sweet potatoes and coarsely grate them using a box grater.
3. In a large mixing bowl, combine the grated sweet potatoes, chopped chives, eggs, grated Parmesan, 2 tablespoons of olive oil, potato flour, salt, onion powder, and black pepper. Mix until all ingredients are evenly incorporated and the mixture holds together.
4. Using your hands, form the sweet potato mixture into 12 equal-sized patties.
5. Heat 2 tablespoons of olive oil in a large non-stick skillet over medium heat. Working in batches to avoid overcrowding the pan, cook the fritters for 4-5 minutes on each side or until they are golden brown and crispy on the outside and cooked through on the inside. Add more olive oil to the pan as needed between batches.
6. Serve the fritters warm, topped with a dollop of sour cream, a scoop of guacamole, and a sprinkle of paprika, if desired. Enjoy!
