Ingredients
  • 500 grams (1.1 pounds) salmon fillet skin on
  • 2 tablespoons (30 ml) olive oil
  • 2 garlic cloves minced
  • 1 tablespoon (15 ml) tomato puree
  • 1 teaspoon (5 ml) sugar
  • 1/2 teaspoon (2.5 ml) chili flakes
  • 1 teaspoon (5 ml) dried oregano
  • 1/2 teaspoon (2.5 ml) salt
  • 2 medium mangoes peeled pitted diced
  • 1 medium avocado pitted peeled diced
  • 1 lime juiced
  • Salt to taste
Instructions

1. Preheat oven to 400°F (200°C)

2. Line baking sheet with parchment paper leaving overhang

3. Place salmon skin side down on baking sheet

4. Whisk olive oil minced garlic tomato puree sugar chili flakes oregano and 1/2 teaspoon salt in small bowl

5. Brush spice mixture evenly over salmon flesh

6. Bake 12-15 minutes until salmon flakes easily with fork

7. Combine diced mango avocado and lime juice in medium bowl

8. Season salsa with salt to taste

9. Spoon salsa over rested salmon immediately before serving
