Tasty Caviar Bites

- 350ml/1 1/2 cups crème fraiche
- 115g/1/2 cup chopped fresh dill
- 1/2 medium red onion, thinly sliced
- 30ml/2 tablespoons lemon juice
- 6g/1/4 teaspoon smoked caviar
- 6g/1/4 teaspoon salt
- 6g/1/4 teaspoon black pepper
- 80g/2.8 oz caviar or roe
1. Start by finely chopping the red onion, aiming for very thin slices. Slice it into thin rings and then chop those rings in half. Set it aside for now.
2. In a small bowl, combine 125ml (1/2 cup US) of crème fraiche, 15g (1 tablespoon US) of chopped fresh dill, 2g (1/4 teaspoon US) of salt, and 1g (1/8 teaspoon US) of black pepper. Mix until well combined.
3. Add 15ml (1 tablespoon US) of lemon juice to the bowl and mix until the desired taste is achieved.
4. Spoon a small amount of the crème fraiche mixture onto a serving plate or platter. Top with a small spoonful of 15g (1 tablespoon US) of caviar or roe.
5. Place a small amount of the chopped red onion on top of the caviar.
6. Add a small dollop of 7g (1/2 teaspoon US) of smoked caviar on top of the red onion.
7. Repeat the process until all of the ingredients have been used up, creating a small tower of flavors on each serving plate.
8. Serve immediately and enjoy at a chilled temperature around 8°C (46°F).
